Chicken Lasagna Roll Ups

I have a Chicken Lasagna Roll Ups Recipe that is really yummy. It includes chicken, spinach, alfredo sauce cheese, and more, all wrapped up in lasagna noodles.

Semi-Homemade

This recipe is “semi-homemade”, which means, we will make some of the recipe homemade and some of it will be purchased already completed from the store. The term “semi-homemade” was made famous by Sandra Lee on the Food Network. These recipes are great to make on weeknights. Altogether, you can make a delicious meal made in half the time. Win/Win!

Lasagna Noodles

In this recipe, the lasagna noodles are used to hold all the ingredients together. For example, like what a tortilla does for a burrito. Instead of just laying them flat, like in a traditional lasagna, you load them up with the chicken filling and roll them up in little pinwheels.

Overall, this recipe is not super advanced since it is semi homemade. The kids would probably even enjoy making this recipe with you.

Chicken Lasagna Roll Ups

Chicken and Spinach Roll up recipe

Chicken, Spinach, Cheese and more all wrapped up in lasagna noodles for a yummy semi-homemade dish.

Cook Time 30 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 12 Lasagna noodles
  • 2 Tbsp of vegetable oil
  • 2 cups Shredded Chicken
  • 1 Egg - Beaten
  • 1 12oz bag of Frozen Spinach
  • 1 15oz container of Ricotta Cheese
  • 2 Tbsp Salt
  • 1Tbsp Pepper
  • 2 Tbsp Italian Seasoning
  • 1 Tbsp of Garlic Powder
  • 1 1/2 cups of Italian Blend Shredded Cheese
  • 2 jars of Alfredo Sauce

Instructions

  1. Pre-heat the oven to 350 degrees.
  2. Boil 12 Lasagna noodles according to package instructions.
  3. While they are cooking, grill chicken and shred or cutup premade rotisserie chicken and set aside.
  4. Once noodles are done, drain the water but do not rinse. Pour oil over noodles and toss so each noodle gets coated.
  5. Cook spinach in the microwave according to the package. When finished drain out all water with a towel. Be careful, it will be hot.
  6. In a bowl combine egg, spinach, ricotta cheese, salt, pepper, garlic powder, Italian seasoning, 3/4 cup shredded cheese and 1/4 cup alfredo sauce. Stir together until everything is combined.
  7. Lay lasagna noodles out flat on your working surface. Spread a heaping spoonful of filling on each noodle. Spread on the entire length of the noodle.
  8. Roll each noodle up like a pinwheel, starting with the end closest to you and rolling away from you. Continue until you have all 12 noodles rolled up.
  9. In a 13x9 baking dish, pour the remaining alfredo sauce from jar one in the bottom of the dish. Season the sauce with additional salt and pepper if desired.
  10. Place chicken lasagna rolls in the baking dish in rows of four.
  11. Using 1 cup of alfredo sauce, top each roll with sauce until it is covered (feel free to use the entire 2nd jar if desired)
  12. Top each roll with the remaining 3/4 cup shredded cheese and a sprinkle of Italian seasoning.
  13. Cover with foil and bake for 25 minutes. Remove the foil and bake an additional 5 minutes to allow the cheese to brown and bubble.
  14. Serve immediately.

Notes

Seasonings are a "guess-amation". Feel free to alter as you see fit.

      Awesome. I love chicken lasagna more I think because I like Alfredo sauce more than red sauce.
